Easy Asparagus
Happy Earth Day!
In honor of Earth Day, I made asparagus – cause it’s green!
Well, not really. I made asparagus last night because it’s delicious. And I still had some leftover from my trip to the Dupont Farmers Market on Sunday. And this recipe is about as easy as it gets when it comes to bringing fresh spring flavor to your plate.
Easy Asparagus
1 bunch asparagus 1 tablespoon butter Olive oil 1/2 onion or medium sized shallot, small dice 2 garlic cloves, minced Salt and pepper Zest of one lemon
Wash the asparagus and dry with a paper towel. Trim the ends and cut the asparagus into pieces at a diagonal. Heat a pan or skillet to medium, add the butter and a little bit of oil. Once the butter and oil bubbles, add the onion, season with salt and pepper, and saute for about 3-5 minutes. Add the garlic, cook for another minute, and then add the asparagus. Season with salt and pepper again, and cook for about 5-7 minutes, stirring regularly.
The asparagus will be tender at this point, but still have a bit. Cook a little longer if you want the asparagus to be more tender. Finally, stir in the lemon zest and serve.
