Breakfast Smoothie

Since it’s a three-day weekend, I figured I’d go with a breakfast theme for today’s Meatless Monday post. Smoothies are incredibly easy to make (just put it all in a blender) and the options are endless (banana, mango, strawberry, pineapple, peach, blueberry, raspberry, etc.). I recommend using frozen fruit for smoothies – it creates a nice consistency and cuts out the need for ice cubes, which can water it down. A banana and a little yogurt rounds out the texture and balances the fruit flavors too.

For this smoothie, I went with a basic combo fruit combo of strawberries, blueberries and a banana. But you could easily mix it up. And like I said, just put it all together and blend away.

Breakfast Smoothie
Makes a little over 2 cups

 

1 1/4 cup frozen strawberries
1/3 cup frozen blueberries
1 ripe banana
1/4 cup non-fat vanilla yogurt
1/2 cup orange juice

 

Combine all of the ingredients in a blender. Puree until smooth. If too thick, add more liquid until you get the desired consistency.
